Spring is a fantastic season.  With weather slightly warmer and varied, this precipitous season is perfect for vegetative growth.  
Fresh Spring vegetables are full of flavour, and inspire lighter, brighter flavour filled cooking taking advantage of the new delicious produce; baby spring carrots, asparagus, spinach, beans and peas.  
Lifestock take advantage of the spring growth (in pastures) and Spring Lambs are typically presented to market end of October/beginning of November (depending on the weather).
