Sausage & Kumara Pie

Serves 4


  • 6 kumara
  • 2 onions
  • 10 Preston’s Cumberland pre-cooked sausages
  • 2T brown sugar 
  • 2T flour
  • 400g can apples
  • 2t curry powder
  • ¼ cup fruit juice 
  • 1T butter
  • ½ cup milk
  • salt & pepper
  • ¾ cup grated cheese


  1. Preheat the oven to at 180°C. Peel, dice then cook kumara in pot of boiling water.
  2. Thinly slice onions into thin wedges. Slice sausages diagonally into 1cm slices.
  3. Place onions, sausages, apples, fruit juice, sugar, flour and curry powder into a baking dish and stir until combined.
  4. Drain the cooked kumara, add butter, pepper and milk and mash until creamy.
  5. Spread the mash evenly over the sausage and apple mix. Using a fork, create an attractive pattern then top with the grated cheese.
  6. Bake, uncovered, for 1 hour or until the pie is warm and the top is a lovely golden colour.
