Place the pork fillets into a plastic bag and roll out with a rolling pin until half the original thickness. Combine the crush garlic, ginger, chilli paste, soy sauce and sesame oil into a bowl and place the pork fillet into the mixture. Cover and refrigerate until you are ready to cook.
Remove the fillets from the marinade, setting the marinade aside. Put the fillets into a fry pan on a high heat and cook for five minutes each side until cooked.
Add the apricot jam to the remaining marinade and brush over the fillet to glaze. Remove from heat and stand for a minute before slicing in large diagonals. Serve with your favourite salad or vegetables.
