Ham Quiche

Serves 4-6


  • 300g ham, diced
  • 50g butter
  • 6 sheets filo pastry
  • 125g cheese, cheddar, cubed
  • 2T chives, chopped
  • 1 can, 440g cream of chicken soup
  • 1 cup milk
  • 5 eggs
  • sea salt
  • freshly ground pepper


  1. Melt butter and lightly brush over each sheet of filo pastry.  Line a 23cm deep flan dish and layer with filo pastry (layer placing pastry in alternating directions).
  2. Sprinkle pastry layer with cheese, ham and chives.  
  3. Combine soup milk and eggs in a bowl, and beat mixture.  Season.
  4. Carefully pour soup mixture into the flan.
  5. Bake at 200ºC for 10 minutes.  Reduce the temperature to 180ºC and continue baking for 30-40 minutes until golden.
