Devilled Sausages

Serves 3-4

  • 6-8 Cumberland pre-cooked sausages
  • 1t beef stock
  • ½ jar sweet fruit chutney
  • 1T soy sauce
  • 1 onion
  • 1 apple
  • 1½ cups hot water
  • 1T cornflour

  1. Cut sausages into slices on a diagonal and fry over a low heat for 10 minutes.
  2. Brown the diced onion whilst sausages continue to cook. Remove the sausages.
  3. Grate the apple and add to the pan with the onion. Reduce the heat and stir in the chutney. Add beef stock to the water and stir this into the onion mixture.
  4. Pour in the soy sauce. Combine the cornflour with just enough water to make a smooth paste. Add this to the sauce mixture and stir to combine. Return the sausages back into the pan to heat through.
  5. Serve on a bed of rice with your favourite fresh herbs on top. You can substitute the apple for pineapple and the chutney with a jam if you prefer.
