Cranberry Sauce

To accompany your Roast Pork

  • 1T butter
  • ½ cup onion, finely chopped
  • 1T fresh rosemary, chopped 
  • ½ cup canned low-salt chicken broth or stock
  • ⅓ cup canned whole berry cranberry sauce
  • 1T balsamic vinegar


  1. While your pork is roasting, melt butter in heavy medium skillet over medium-high heat. 
  2. Add onion and rosemary; sauté until onion softens, about 3 minutes. 
  3. Add broth/stock, cranberry sauce and vinegar and whisk until cranberry sauce melts, about 2 minutes. 
  4. When the pork is finished cooking, transfer the roast to a work surface to stand. 
  5. Scrape any juices from the roasting pan into cranberry mixture. 
  6. Boil until sauce has reduced enough to coat spoon thickly, about 6 minutes. 
  7. Season with salt and pepper and serve with roast pork.
