Chicken, Avocado and Bacon Salad


  • 1 hot cooked chicken
  • 6 slices of streaky bacon
  • 1 cos lettuce
  • 1 avocado
  • ½ cup fresh basil leaves
  • 1 lemon
  • ½ clove garlic
  • fresh thyme
  • 150g pottle if natural yoghurt


  1. Sauté the bacon in a hot pan, and roughly chop.  
  2. Shred the rotisserie chicken. 
  3. Slice the avocado and tear the basil leaves into uneven sizes.
  4. Layer lettuce leaves in a serving dish, and top with chicken, sliced avocado, bacon and basil.
  5. To make the dressing, squeeze the lemon, and crush the garlic.  Combine the lemon juice with the yoghurt, crushed garlic, and finely chopped thyme.
  6. Season with salt and pepper.
  7. Drizzle the dressing over the salad and serve.
