Chicken & Artichoke Casserole (American Style)


  • 4 boneless skinless chicken breasts
  • ½ cup mushrooms, sliced
  • ½ cup green onion, chopped
  • 2T butter
  • ⅛ teaspoon garlic salt
  • 240g ounces artichoke hearts (drained)
  • ½ cup white wine
  • ¼t salt
  • ⅛t pepper
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 1 cup parmesan cheese, grated


  1. Preheat oven to 180ºC. 
  2. Cook chicken (any way you choose), cool and shred. 
  3. Saute mushrooms and green onions in butter. Sprinkle with garlic salt.
  4. In a bowl, combine chicken, artichokes, mushrooms and onions.
  5. In another bowl, combine wine, salt, pepper, mayonnaise, sour cream, and parmesan cheese (leaving a little aside to sprinkle over the top of the casserole).
  6. Fold into the chicken mixture and sprinkle with Parmesan cheese.
  7. Place mixture into a casserole dish.
  8. Bake for 30 minutes.
