Beef Nachos

Serves 4


  • 500g beef mince
  • 420g tinned chilli beans
  • ½t chilli powder
  • 1t cajun spice
  • 1 cup grated cheese
  • 1 grated carrot
  • ½ cup mushrooms
  • 210g tinned tomatoes
  • nacho corn chips
  • ½ cup sour cream 
  • 1 tomato
  • ½ cup chopped mint
  • ½ red onion


  1. Brown beef mince in a fry pan. Add grated carrot, mushrooms, chilli beans, tinned tomatoes, chilli and cajun seasoning. Bring to boil and then simmer for ten minutes. 
  2. Place corn chips into individual bowls, spoon over nacho mince.
  3. Sprinkle the cheese on top. Place under a hot grill to melt. 
  4. To make your salsa topping, finely dice tomato, mint and red onion and combine. 
  5. Top the nachos with sour cream and salsa.
