Basic Roasted Lamb Rack


  • lamb rack (typically allow 2-4 chops per person)
  • salt and pepper
  • additional seasoning (your favourite seasoning(s) such as rosemary, garlic or whole grain mustard)


  1. Preheat oven to 250ºC. 
  2. Sear the rack in a hot seasoned pan over high heat for 3 minutes per side to lock in the flavour and juices. 
  3. Coat the lamb with salt and pepper and your favourite seasoning(s), such as whole grain mustard or herbs. 
  4. Place the rack, fat side up, in a roasting pan and roast in the middle of the oven (for approx 14-16 minutes for a medium rare serving)
  5. Transfer racks to a warm plate, cover with foil and let rest for 10 minutes to allow juices to settle. 
  6. Slice into chops and serve
