Bacon & Egg Rolls

Serves 4


  • 2 spring onions finely chopped
  • ¼ cup of grated cheese
  • 50g butter
  • 12 slices of streaky bacon (cooked)
  • 4 round bread rolls


  1. Preheat the oven to 180ºC (fan bake).  
  2. Remove a slice from the top of each bread roll.  Hollow out, leaving about 5mm on the sides and base.
  3. Line base and sides of each roll with bacon.
  4. Break an egg in the centre of each roll.  
  5. Sprinkle finely chopped spring onions and cheese over the eggs. 
  6. Melt the butter and brush over the outside of the rolls and the lids.
  7. Cook for approximately 25 minutes with the lids separate until the egg white is set.
  8. Replace lids to serve
